Kali’s Spring Mix

Spring is in the Air!! I love spring! Flowers bloom, the weather gets nice, and there is an all around good vibe feeling felt by everyone!  One of my favorite things to do in spring is to go on a nice spring picnic! I like to drive to a nice meadow blasting my favorite spring songs and cruise along the road soaking in the nature around me! I also try to bring a fun new spring salad to munch on when I arrive!

KALIFORNIA – San Francisco

Although I consider myself a woman of the world, I am also very proud of where I am from! My humble beginnings started in San Mateo, California and throughout my life I’ve had the wonderful opportunity to explore all of  California! I wanted to start sharing my KALI- fornia experiences with the world!

Baker Beach is a great place for dog lovers and site seers! On a beautiful day you can get a FANTASTIC view of the
Golden Gate Bridge and soak up the sun!

My Favorite Restaurant: Nopalito

 Nopalito  is a sustainable organic Mexican kitchen! There are many items to choose from on their menu and the prices aren’t crazy either! There are two places to find this tasty place, so make sure you visit, eat a Ceviche Verde con Pescado  and cheers to me with a margarita!!

The North Beach Festival is located where else but North Beach! This fun little festival is filled with beer gardens , shop vendors, and music! It’s a great time and something everyone should participate in!

The Ferry Plaza Farmers Market is a California certified farmers market operated by the nonprofit Center for Urban Education about Sustainable Agriculture.  Every Tuesday, Thursday and Saturday you can go to the Farmers market and find an assortment of fruits, vegetables, herbs, flowers, meats and eggs! Most if not close to all of the items you find are from local organic farmers!

My Favorite Bar: Bourbon and Branch

Want to get an experience like never before? Check out Bourbon and Branch! Bourbon and Branch is a “speakeasy” in modern times. This bar is set to be like a speak easy during the prohibition in the 1920′s. No photography or cell phones are allowed and guests are to follow a set of house rules. Trust me when I say this bar will open you up to an entirely new experience!

My Favorite Drinks: The Tipsy Pig

If you love a fun cocktail the Tipsy Pig is the place to go! the drinks are served in Mason Jars and have an assortment of beverages all with fresh ingredients inside them! My Favorite Sporting Event: Giants Games

Don’t get me wrong, I have much love for all bay area sports, but the giants will forever have my heart. 49er Games are amazing, but being at AT&T Park has a totally different feel! Giants bring the best of San Francisco into one place. There are also TONS of games, so you have a lot of opportunities to partake in the amazing ball park!

My Favorite District: Noe Valley

Noe Valley is a beautiful little district that will make you want to move to San Francisco! There are a ton of beautiful vintage houses, plus great shopping and  restaurants!
Get a burger at Barney’s  - you will not regret it!

My Favorite Museum: The California Academy of Sciences

The California Academy of Science is a great spot to go! Located in Golden Gate Park, The Academy of Sciences has so much for you to discover at any age! Going through the rainforest exhibit takes you to a whole new world and you feel so connected to where you are! Butterflies literally will  land on you as you walk through this exhibit!

Holiday Harvest Spread for Kali Crisps

Need a good, quick, and tasty recipe for Thanksgiving? Look no further! This is my recipe for a wonderful Holiday Harvest Spread that is sure to rock your Thanksgiving!

 

INGREDIENTS:

What to Do:

  1. - Heat the oven to 350F. Take a baking sheet; spread pecans on the sheet and dry fry for 10 to 15 minutes. Be careful do not burn the pecans. Set the toasted pecans aside to cool.

 

  1.  - Mix cheddar cheese, cream cheese, greek yogurt, mozzarella cheese and spring onions in a large bowl. We recommend using  Clover Stornetta products for your dairy ingredients! Layer the mixture on a shallow dish or pie plate and place in a refrigerator for 1 hour.

  *If you do use Clover Stornetta Products, make sure to take a picture and enter it into the #CloverLover Contest

 

  1. - Put out from the refrigerator and scatter over the toasted pecans and spread cranberry jam evenly over top.

 

  1. - Serve with Kali Crisps from Whole Foods Markets and enjoy The Holiday Harvest Spread!

Dia De Los Muertos Kali Style

         Happy Dia De Los Muertos or Day of the Dead!

Dia De Los Muertos is such an underrated holiday! While most people indulge on Halloween treats, I veer towards the celebrations and festivities of Dia De Los Muertos. This mexican holiday has inspired me to find a Quinoa Black Bean Taco Salad Recipe adapted from The First Year Blog with a Kali Crisps Spin! Instead of tortilla chips, insert Kali Crisps  into your spicy fiesta salad!

Ingredients:
- 1 & 1/2 cups cooked quinoa (about 3/4 cup uncooked quinoa)
- 1 tbsp olive oil
- 1 medium onion, diced
-3 cloves garlic, finely minced
- 1 cup vegetable broth or chicken broth
- 1 (14.5 oz) can diced tomatoes with green chilis, undrained
- 1 & 1/2 tsp chili powder- 1 tsp ground cumin
- 1/2 tsp paprika
- 1/4 tsp cayenne pepper
- Salt and freshly ground black pepper, to taste
- 1 & 1/2 cups frozen corn - 2 (15 oz) cans black beans, drained and rinsed
- juice of 1 lime- 1/2 cup cilantro, chopped
- Chopped lettuce/spinach
- Cheese
- Avacado
- Fresh tomatoes
- Salsa
- and of course Kali Crisps, try our Original Parmesean Crisps or our newest flavor, Tomato Basil Crisps!

 

Kali Crisps can be purchased at your local Whole Foods!

What to Do:
- Heat the olive oil in a large non-stick saucepan over medium high heat. Also prepare the quinoa in a separate pot as directed on the package.
- Once hot, add onion and saute until golden and tender, about 3 minutes.
- Add in garlic and saute 30 seconds longer.
- Stir in the broth, diced tomatoes, cooked quinoa, chili powder, cumin, paprika, cayenne, and season with salt and pepper to taste.
- Bring mixture to a boil, then reduce heat, cover saucepan with lid and simmer about 20 minutes, until mixture has thickened.
- Stir in the corn and black beans and simmer, uncovered 5 – 10 minutes, stirring occasionally
- Mix in the lime juice and cilantro.
- Make a bed of lettuce and add your toppings! Don’t forget the Kali Crisps!

Aloha From Kali

Aloha my wonderful friends! I just returned from a quick trip to Oahu, Hawaii and thought I would share some of the fun things I experienced! I spent two nights in Waikiki, a very busy and big city right on the beach and then I spent the next six nights in the beautiful town of Ko’Olina. Take a look at some of my Hawaiian adventures.

During my trip I stopped at the Whole Foods Market in Honolulu! I had just hiked up Diamond Head (the big mountain in the back of the pictures) and was desperately hungry after my climb. I saw a Whole Foods Market was close by and knew it would be the perfect place to find some healthy and tasty snacks. I stopped in and wouldn’t you know it, there were Kali Crackers at the store! Easy to eat and delicious to taste; they made the perfect snack for the beach!

I love the saying, “Eat Well, Travel Often” and believe me I ate VERY well on my trip. Besides Kali crackers, these are some of my favorite food and drink items! Also at the Whole Foods Market I found Mission Blue’s Chocolate Bark, “Ain’t No Kryptonite”. I also devoured a delicious waffle with fresh glazed bananas and crushed macadamia nuts. My favorite drink was called a “Lava Flow” – it was basically a Pina Colada with a strawberry puree, topped with a fresh pineapple slice! Lastly, I treated myself to a steak dinner at “Dukes”, a very famous restaurant in Hawaii. I had steak and potatoes that were cooked to PERFECTION! It was an incredible meal and I would recommend the restaurant to anyone looking for a fantastic meal experience.

Oahu was a beautiful Island and I will always cherish and remember my time there. These are just a few of the shots I took that I loved! The sunset at Waikiki was amazing and it took my breath away every time I watched it.  I also loved how clear and beautiful the water was in Oahu. I took lots of pictures of the water, but the one with my feet was my favorite! The plant life in Oahu was incredible and overwhelming, the plants were so perfect and colorful! I was also in love with the sunset in Ko’Olina, a town about 30 minutes away from Waikiki. Waikiki was an amazing city, but Ko’Olina offered a more tropical and relaxing vibe.

It was a wonderful trip and I encourage any adventurer out there to explore this beautiful Island! Mahalo for reading!!
